  • ¼ cup milk (dairy or non-dairy)
  • ¼ cup melted butter or neutral oil
  • 1 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk (adjust for desired consistency)
  • ½ teaspoon vanilla extract
  • Pinch of cinnamon (optional)

Instructions

1. Prep the apples

  • Peel, core, and dice the apples into small pieces
  • Toss them in a bowl with lemon juice to prevent browning and enhance brightness
  • Set aside while preparing the batter

2. Make the batter

  • In a large mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt
  • In a separate bowl, combine eggs, brown sugar, granulated sugar, yogurt, milk, melted butter, and vanilla extract
  • Mix wet ingredients until smooth and well combined

3. Combine and fold

  • Add the wet mixture into the dry ingredients
  • Gently fold the batter together until just combined—avoid overmixing
  • Fold in the diced apples until evenly distributed

4. Form the fritters

  • Preheat your oven to 375°F (190°C)
  • Line a baking sheet with parchment paper or a silicone mat
  • Use a large spoon or ice cream scoop to drop mounds of batter onto the sheet, slightly flattening the tops
  • Leave space between each fritter to allow for spreading

5. Bake the fritters

  • Bake for 18–22 minutes or until golden brown and cooked through
  • A toothpick inserted into the center should come out clean
  • Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack

6. Glaze the fritters

  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth
  • Drizzle glaze over warm fritters using a spoon or piping bag
  • Let the glaze set for a few minutes before serving
