For the Fritters:
- 2 medium apples (such as Honeycrisp or Granny Smith), peeled and diced
- 2 tablespoons lemon juice
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 large eggs
- ⅓ cup brown sugar
- ⅓ cup granulated sugar
- ½ cup plain yogurt or sour cream
- ¼ cup milk (dairy or non-dairy)
- ¼ cup melted butter or neutral oil
- 1 teaspoon vanilla extract
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk (adjust for desired consistency)
- ½ teaspoon vanilla extract
- Pinch of cinnamon (optional)
Instructions
1. Prep the apples
- Peel, core, and dice the apples into small pieces
- Toss them in a bowl with lemon juice to prevent browning and enhance brightness
- Set aside while preparing the batter
2. Make the batter
- In a large mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt
- In a separate bowl, combine eggs, brown sugar, granulated sugar, yogurt, milk, melted butter, and vanilla extract
- Mix wet ingredients until smooth and well combined
3. Combine and fold
- Add the wet mixture into the dry ingredients
- Gently fold the batter together until just combined—avoid overmixing
- Fold in the diced apples until evenly distributed
4. Form the fritters
- Preheat your oven to 375°F (190°C)
- Line a baking sheet with parchment paper or a silicone mat
- Use a large spoon or ice cream scoop to drop mounds of batter onto the sheet, slightly flattening the tops
- Leave space between each fritter to allow for spreading
5. Bake the fritters
- Bake for 18–22 minutes or until golden brown and cooked through
- A toothpick inserted into the center should come out clean
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack
6. Glaze the fritters
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth
- Drizzle glaze over warm fritters using a spoon or piping bag
- Let the glaze set for a few minutes before serving
