For the Croissant Boats:

  • 6 large croissants (day-old or fresh)
  • 6 large eggs
  • ¼ cup milk (or plant-based alternative)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded cheese (cheddar, mozzarella, or a blend)
  • ½ cup diced bell peppers (red, green, or yellow)
  • ¼ cup chopped green onions or chives
  • ½ cup cooked and crumbled breakfast sausage or diced turkey slices (optional)

Optional Add-ins and Toppings:

  • Sliced mushrooms
  • Baby spinach or arugula
  • Diced tomatoes
  • Feta cheese
  • Avocado slices (for serving)
  • Fresh herbs (parsley, dill, or basil)

Instructions

1. Prepare the croissants

  • Preheat your oven to 350°F (175°C).
  • Slice the tops off each croissant lengthwise and gently hollow out the inside, removing some of the soft bread to create a cavity.
  • Be careful not to tear the outer shell, as it will hold the filling during baking.
  • Place the prepared croissants in a baking dish or on a parchment-lined tray.

2. Make the egg filling

  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Stir in the shredded cheese, bell peppers, green onions, and your choice of cooked sausage or turkey if using.
  • Add any optional vegetables or herbs to customize the filling to your liking.

3. Fill the croissant boats

  • Carefully spoon the egg mixture into each croissant cavity, distributing the filling evenly.
  • Fill each boat until just below the edge to prevent overflow while baking.

4. Bake the croissant boats

  • Bake in the preheated oven for 20–25 minutes, or until the egg filling is set and lightly golden on top.
  • Check by inserting a toothpick into the center—it should come out clean when fully cooked.
  • If the tops of the croissants start to brown too quickly, cover loosely with foil halfway through baking.

5. Garnish and serve

  • Remove from the oven and let cool for a few minutes.
  • Garnish with fresh herbs or avocado slices if desired.
  • Serve warm, paired with a fresh fruit salad or yogurt for a complete breakfast.
