  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes (optional for heat)
  • 2 tbsp fresh parsley, chopped

For the Sauce (Optional, for serving):

  • 2 cups marinara sauce
  • ½ tsp dried oregano
  • 1 clove garlic, minced
  • 1 tbsp olive oil

Instructions

Step 1: Prepare the Meatball Mixture

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine ground chicken, ricotta cheese, Parmesan, breadcrumbs, and egg.
  3. Add the garlic, olive oil, salt, pepper, oregano, basil, red pepper flakes, and fresh parsley.
  4. Mix everything gently but thoroughly using a wooden spoon or your hands. Be careful not to overwork the meat, as this can make the meatballs dense.

Step 2: Shape and Bake the Meatballs

  1. Using a tablespoon or cookie scoop, portion out the mixture and roll it into golf ball-sized meatballs. Place them on the prepared baking sheet, ensuring they have space between them.
  2. Lightly brush or spray the meatballs with olive oil to help them develop a golden crust.
  3. Bake for 22-25 minutes, or until the meatballs are golden brown and reach an internal temperature of 165°F (75°C).

Step 3: Warm the Sauce (Optional but Recommended)

  1. While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  2. Pour in the marinara sauce and sprinkle in oregano. Let it simmer on low heat until the meatballs are ready.

Step 4: Serve and Enjoy!

  1. Transfer the baked meatballs to the sauce and gently coat them. Let them simmer for 2-3 minutes to absorb the flavors.
  2. Serve over pasta, zucchini noodles, or with toasted bread. Garnish with extra Parmesan and fresh basil.
