Instructions
Step 1: Prepare the BBQ Chicken
In a small bowl, combine the shredded chicken and BBQ sauce, mixing until the chicken is evenly coated. If using leftover grilled or rotisserie chicken, warm it up slightly in a pan or microwave for better texture and flavor.
Step 2: Prep the Bread
Lay out the bread slices on a flat surface. Spread butter on one side of each slice. For extra crispiness, spread a thin layer of mayonnaise on the same side as the butter (this helps achieve a golden, crispy crust).
Step 3: Assemble the Sandwich
- Flip two slices of bread over (buttered side down).
- Sprinkle a layer of shredded cheese evenly over the unbuttered side.
- Spread the BBQ chicken mixture over the cheese.
- Add any extra toppings (bacon, caramelized onions, etc.).
- Sprinkle another layer of cheese on top before placing the second slice of bread (buttered side up).
Step 4: Cook the Sandwich
- Heat a nonstick skillet or griddle over medium-low heat.
- Place the sandwich in the skillet and cook for 3-4 minutes on one side until golden brown.
- Flip carefully and cook for another 3-4 minutes until the cheese is fully melted and the bread is crispy.
- Press down gently with a spatula to ensure even melting.
