Blueberry Butter Swim Biscuits

  • Author: Olivia
  • Total Time: 35 minutes
  • Yield: 9 biscuits 1x

Ingredients

Scale

To make these buttery and blueberry-filled biscuits, you’ll need the following ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 1/2 cups buttermilk (or substitute with milk + 1 tablespoon vinegar)
  • 1 cup fresh or frozen blueberries

For the Butter Bath:

  • 1/2 cup (1 stick) unsalted butter, melted

Optional Toppings:

  • 1 tablespoon granulated sugar (for sprinkling)
  • Lemon zest (for a bright, citrusy flavor)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 450°F (230°C). While the oven heats, prepare an 8×8-inch or 9×9-inch baking dish by greasing it lightly or lining it with parchment paper.

Step 2: Melt the Butter

Melt 1/2 cup of unsalted butter in the microwave or on the stovetop. Pour the melted butter into the prepared baking dish, ensuring it evenly coats the bottom. Set aside.

Step 3: Mix the Dry Ingredients

In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. These dry ingredients form the base of the biscuit dough.

Step 4: Add the Wet Ingredients

Pour the buttermilk into the dry ingredients and stir gently with a spatula or wooden spoon until just combined. The batter will be thick and slightly lumpy, which is exactly what you want. Be careful not to overmix, as this can make the biscuits tough.

Step 5: Fold in the Blueberries

Gently fold the blueberries into the batter, being careful not to crush them. If you’re using frozen blueberries, there’s no need to thaw them—just toss them in straight from the freezer.

Step 6: Assemble the Biscuits

Pour the batter directly into the baking dish with the melted butter. Use a spatula to spread the batter evenly, ensuring it reaches all corners of the dish. The butter will rise up around the edges of the batter, creating a golden crust as the biscuits bake.

Step 7: Add Toppings (Optional)

For an extra touch of sweetness, sprinkle 1 tablespoon of granulated sugar over the top of the batter. If you love citrus flavors, grate a little lemon zest on top as well.

Step 8: Bake the Biscuits

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the biscuits are golden brown on top and a toothpick inserted into the center comes out clean.

Step 9: Cool and Serve

Remove the biscuits from the oven and let them cool for 5 minutes before slicing. Serve warm with your favorite toppings, such as honey, jam, or whipped cream.
