Ingredients
Scale
For the Chicken:
- 1 ½ lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil (or avocado oil)
For the Sauce:
- ⅓ cup low-sodium soy sauce
- ¼ cup apple juice (bourbon substitute)
- ¼ cup chicken broth
- ⅓ cup brown sugar (packed)
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground ginger
- ¼ teaspoon red pepper flakes (optional, for spice)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken the sauce)
For Garnish:
- 2 green onions (sliced)
- 1 teaspoon sesame seeds
Instructions
Step 1: Prepare the Chicken
- Cut the boneless, skinless chicken thighs into small, bite-sized pieces. Thighs are preferred over chicken breasts because they remain juicy and tender.
- Toss the chicken pieces with 2 tablespoons of cornstarch. This helps create a slightly crispy exterior when cooked while also thickening the sauce later.
Step 2: Cook the Chicken
- Heat a large pan or wok over medium-high heat. Add 2 tablespoons of vegetable oil.
- Once the oil is hot, add the chicken in a single layer. Let it sear for about 3 minutes without stirring to develop a golden crust.
- Stir and cook for another 3-4 minutes until the chicken is fully cooked and slightly crispy. Remove the chicken from the pan and set aside.
Step 3: Make the Sauce
- In the same pan, reduce heat to medium. Add soy sauce, apple juice, chicken broth, brown sugar, honey, apple cider vinegar, garlic powder, onion powder, ground ginger, and red pepper flakes.
- Stir well and let the sauce simmer for 2-3 minutes, allowing the flavors to blend.
Step 4: Thicken the Sauce & Coat the Chicken
- In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons of water to create a slurry.
- Pour the cornstarch mixture into the sauce and stir immediately. Let it cook for 1-2 minutes until the sauce thickens.
- Return the cooked chicken to the pan and toss it in the sauce until fully coated. Simmer for another 2-3 minutes, allowing the chicken to absorb the flavors.
Step 5: Garnish and Serve
- Remove the pan from heat and garnish the Bourbon Chicken with sliced green onions and sesame seeds.
- Serve hot over steamed rice, noodles, or sautéed vegetables.
