For the Chicken:

  • 1 ½ lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil (or avocado oil)

For the Sauce:

  • ⅓ cup low-sodium soy sauce
  • ¼ cup apple juice (bourbon substitute)
  • ¼ cup chicken broth
  • ⅓ cup brown sugar (packed)
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon red pepper flakes (optional, for spice)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken the sauce)

For Garnish:

  • 2 green onions (sliced)
  • 1 teaspoon sesame seeds

Instructions

Step 1: Prepare the Chicken

  1. Cut the boneless, skinless chicken thighs into small, bite-sized pieces. Thighs are preferred over chicken breasts because they remain juicy and tender.
  2. Toss the chicken pieces with 2 tablespoons of cornstarch. This helps create a slightly crispy exterior when cooked while also thickening the sauce later.

Step 2: Cook the Chicken

  1. Heat a large pan or wok over medium-high heat. Add 2 tablespoons of vegetable oil.
  2. Once the oil is hot, add the chicken in a single layer. Let it sear for about 3 minutes without stirring to develop a golden crust.
  3. Stir and cook for another 3-4 minutes until the chicken is fully cooked and slightly crispy. Remove the chicken from the pan and set aside.

Step 3: Make the Sauce

  1. In the same pan, reduce heat to medium. Add soy sauce, apple juice, chicken broth, brown sugar, honey, apple cider vinegar, garlic powder, onion powder, ground ginger, and red pepper flakes.
  2. Stir well and let the sauce simmer for 2-3 minutes, allowing the flavors to blend.

Step 4: Thicken the Sauce & Coat the Chicken

  1. In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons of water to create a slurry.
  2. Pour the cornstarch mixture into the sauce and stir immediately. Let it cook for 1-2 minutes until the sauce thickens.
  3. Return the cooked chicken to the pan and toss it in the sauce until fully coated. Simmer for another 2-3 minutes, allowing the chicken to absorb the flavors.

Step 5: Garnish and Serve

  1. Remove the pan from heat and garnish the Bourbon Chicken with sliced green onions and sesame seeds.
  2. Serve hot over steamed rice, noodles, or sautéed vegetables.
