- 12 soft dinner roll dough balls (homemade or store-bought)
- 6 large eggs
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup cooked turkey sausage, crumbled (or beef bacon, chopped)
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped green onions (optional)
- 1 tablespoon chopped parsley (for garnish)
- 2 tablespoons unsalted butter, melted (for brushing)
- 1/2 teaspoon garlic powder (optional, for the butter glaze)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper. This keeps the rolls from sticking and helps them bake evenly.
In a non-stick skillet, heat olive oil over medium heat. Crack in the eggs, season with salt and pepper, and scramble them until just set. Don’t overcook—they’ll bake again inside the rolls. Once done, set them aside to cool slightly.
If you’re using turkey sausage or beef bacon, cook it in a skillet until browned and crispy. Drain any excess grease and let it cool. You want the filling cool enough so it doesn’t melt the dough too early.
On a clean surface, flatten each dough ball slightly using your hands or a rolling pin to create a small circle, about 3 inches wide. Try not to make the center too thin.
Spoon a small amount of scrambled eggs into the center of each dough circle, followed by a bit of turkey sausage and a sprinkle of both cheddar and mozzarella cheese. Add green onions if using.
Carefully pinch the dough edges together to seal the filling inside, forming a ball. Place each filled dough ball seam-side down in your prepared baking dish. Leave a little space between them so they can puff up while baking.
In a small bowl, mix the melted butter with garlic powder (if using). Brush the tops of the rolls generously with this buttery mixture. This helps them turn golden and adds flavor.
Bake the breakfast rolls in the preheated oven for 20 to 25 minutes, or until the tops are golden brown and the rolls are cooked through. You should see cheese bubbling out just a bit—yum.
Remove the rolls from the oven and let them cool for a few minutes. Sprinkle with chopped parsley for a fresh pop of color and flavor.
Serve warm on their own, with a side of fruit, or even dipped in ketchup or hot sauce for an extra kick.
