For the Creamy Sauce Base (Optional but Recommended):

  • ¼ cup ranch dressing or blue cheese dressing
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice

Additional Toppings and Garnishes:

  • ¼ cup red onion, thinly sliced
  • ¼ cup green onions, chopped

Instructions

Step 1: Prepare the Chicken

  • In a mixing bowl, combine the shredded chicken, buffalo sauce, melted butter, garlic powder, and black pepper. Stir well until the chicken is evenly coated. Set aside to let the flavors meld.

Step 2: Prepare the Flatbread

  • Preheat the oven to 400°F (200°C). If using a skillet, heat it over medium heat.
  • Place the flatbreads on a baking sheet or a pizza stone. Lightly brush each with olive oil for extra crispiness.

Step 3: Assemble the Flatbread

  • Spread a thin layer of the creamy sauce (if using) evenly over the flatbreads.
  • Sprinkle half of the mozzarella and cheddar cheese over the sauce.
  • Evenly distribute the buffalo chicken mixture on top.
  • Add the remaining cheese and crumbled blue cheese (if using).

Step 4: Bake the Flatbread

  • Place the flatbreads in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  • If using a skillet, cook the flatbread over medium heat for about 5 minutes, covering it with a lid to help melt the cheese.
