  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese (sharp or medium)
  • 2 tbsp all-purpose flour
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme (optional)
  • 1/2 cup shredded carrots (optional)

Instructions

Step 1: Brown the Ground Beef

Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the beef with a slotted spoon and set aside, leaving about 1 tablespoon of fat in the pot. If using lean ground beef or turkey, add a tablespoon of olive oil to prevent sticking.

Step 2: Sauté the Aromatics

In the same pot, add the olive oil (if needed) and sauté the diced onion over medium heat until softened, about 3 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring constantly, until fragrant.

Step 3: Add Potatoes and Broth

Stir in the diced potatoes, salt, black pepper, smoked paprika, and thyme (if using). Pour in the chicken or beef broth, scraping up any browned bits from the bottom of the pot for added flavor. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Step 4: Thicken the Soup

In a small bowl, whisk the flour with the milk until smooth. Slowly pour the mixture into the pot, stirring constantly to prevent lumps. Simmer for 2-3 minutes, allowing the soup to thicken slightly.

Step 5: Add Cream and Cheese

Lower the heat to prevent curdling. Stir in the heavy cream and Worcestershire sauce. Gradually add the shredded cheddar cheese, one handful at a time, stirring until melted and smooth.

Step 6: Return the Ground Beef

Return the cooked ground beef to the pot and stir to combine. If using shredded carrots, add them at this stage and let the soup simmer for an additional 5 minutes to meld the flavors.

Step 7: Serve and Garnish

Ladle the soup into bowls and garnish with your choice of toppings, such as crumbled bacon, chopped green onions, or additional shredded cheese. Serve warm with crusty bread or crackers.
