Cheesy Mashed Potato Puffs

  • Author: Olivia
  • Total Time: 45 minutes
  • Yield: 12-15 potato puffs 1x

Ingredients

Scale

For the Mashed Potato Puffs:

  • 2 cups mashed potatoes (homemade or store-bought)
  • 2 large eggs
  • ½ cup shredded cheddar cheese (or any favorite cheese)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp sour cream or Greek yogurt
  • 2 tbsp chopped fresh chives or parsley (optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper

Optional Toppings:

  • Additional shredded cheese for sprinkling
  • Chopped fresh herbs (chives, parsley, or dill)
  • Crumbled cooked bacon

Instructions

Prepare the Mixture:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin or line it with silicone muffin liners.
  2. Combine Ingredients: In a large mixing bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, sour cream, chives (if using), garlic powder, onion powder, salt, and pepper. Mix well until smooth and evenly incorporated.

Fill the Muffin Tin:

  1. Portion the Mixture: Using a spoon or cookie scoop, divide the potato mixture evenly among the prepared muffin cups. Fill each cup about ¾ full and smooth the tops with the back of a spoon.
  2. Add Toppings: Sprinkle additional shredded cheese on top of each puff for an extra cheesy finish.

Bake the Potato Puffs:

  1. Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the puffs are golden brown and set in the center.
  2. Cool Slightly: Allow the potato puffs to cool in the tin for 5 minutes before carefully removing them with a butter knife or small spatula.

Serve:

  1. Garnish and Enjoy: Top with crumbled bacon, fresh herbs, or a dollop of sour cream if desired. Serve warm as a side dish or appetizer.
