Coconut Macaroon Nests

  • Author: Olivia
  • Total Time: 30 minutes
  • Yield: 12 nests 1x

Ingredients

Scale

For the Macaroons:

  • 3 cups sweetened shredded coconut
  • 3 large egg whites
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

For the Filling (Choose One or More):

  • ½ cup melted chocolate (dark, milk, or white)
  • ¼ cup fruit jam (raspberry, strawberry, or apricot)
  • Mini chocolate eggs, jelly beans, or M&M’s for decoration

Instructions

Step 1: Preheat the Oven

Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

Step 2: Mix the Macaroon Batter

In a large bowl, combine shredded coconut, egg whites, sugar, vanilla extract, and salt. Stir until the mixture is fully incorporated and sticky. The egg whites will help bind the coconut together, ensuring the nests hold their shape when baked.

Step 3: Shape the Nests

Scoop about 2 tablespoons of the mixture and form small mounds on the prepared baking sheet. Use the back of a spoon or your fingers to gently press down the center of each mound to create a slight indentation, forming a nest shape. Be careful not to press too hard, as you want to maintain the fluffy texture.

Step 4: Bake Until Golden

Bake for 12-15 minutes, or until the edges of the nests are golden brown and slightly crisp. Remove from the oven and let them cool completely on the baking sheet. The macaroons will firm up as they cool.

Step 5: Add the Filling

Once the macaroons are completely cool, fill each nest with a teaspoon of melted chocolate, jam, or Nutella. If using melted chocolate, allow it to set slightly before adding decorations.

Step 6: Decorate and Serve

Top each nest with mini chocolate eggs, jelly beans, or M&M’s for a fun and festive touch. Serve immediately or store for later enjoyment.
