Coffee Pancakes

  • Author: Olivia
  • Total Time: 35 minutes
  • Yield: 12 pancakes 1x

Ingredients

Scale

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons cocoa powder (optional, for a mocha twist)
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup granulated sugar

Wet Ingredients:

  • ¾ cup strong brewed coffee (cooled to room temperature)
  • ¾ cup whole milk or plant-based milk
  • 1 large egg
  • 2 tablespoons melted butter (plus extra for cooking)
  • 1 teaspoon vanilla extract

Optional Add-Ins and Toppings:

  • ½ cup chocolate chips or chunks
  • Whipped cream
  • Maple syrup
  • Powdered sugar
  • Fresh berries
  • Espresso powder (for garnish)

Instructions

Step 1: Prepare the Coffee

  1. Brew a strong cup of coffee using your preferred method (drip, French press, or espresso). Allow the coffee to cool to room temperature before using it in the batter.

Step 2: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together the flour, cocoa powder (if using), baking powder, baking soda, salt, and sugar. Ensure the dry ingredients are evenly combined to prevent clumps.

Step 3: Combine the Wet Ingredients

  1. In a separate bowl, whisk together the cooled coffee, milk, egg, melted butter, and vanilla extract. Mix until smooth.

Step 4: Create the Batter

  1. Gradually pour the wet ingredients into the dry ingredients, stirring gently with a whisk or spatula. Mix until just combined; it’s okay if the batter is slightly lumpy. Overmixing can result in dense pancakes.

Step 5: Preheat the Pan

  1. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter and spread it evenly across the surface.

Step 6: Cook the Pancakes

  1. Using a ladle or ¼-cup measuring cup, pour batter onto the skillet to form pancakes.
  2. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
  3. Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
  4. Repeat with the remaining batter, adding more butter to the skillet as needed.

Step 7: Serve and Enjoy

  1. Stack the pancakes on a plate and top with your favorite toppings, such as whipped cream, maple syrup, or fresh berries. Serve immediately for the best texture and flavor.
