Instructions
Step 1: Prepare the Coffee

Step 3: Combine the Wet Ingredients
- In a separate bowl, whisk together the cooled coffee, milk, egg, melted butter, and vanilla extract. Mix until smooth.

- Gradually pour the wet ingredients into the dry ingredients, stirring gently with a whisk or spatula. Mix until just combined; it’s okay if the batter is slightly lumpy. Overmixing can result in dense pancakes.
Step 5: Preheat the Pan
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter and spread it evenly across the surface.
Step 6: Cook the Pancakes
- Using a ladle or ¼-cup measuring cup, pour batter onto the skillet to form pancakes.
- Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
- Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
