  • Strawberries, sliced
  • Kiwi, peeled and sliced into half-moons
  • Blueberries
  • Raspberries
  • Blackberries
  • Red or green grapes, halved
  • Mango or pineapple, diced
  • Mandarin orange segments
  • Fresh mint leaves (optional garnish)

Optional Decoration Add-Ons

  • Pastel sprinkles or sanding sugar
  • Mini marshmallows
  • Colored glaze drizzle
  • Edible glitter or pearl dust

Instructions

1. Prepare the Sugar Cookie Dough

  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large mixing bowl, cream butter and sugar together until light and fluffy (2–3 minutes).
  • Add egg, vanilla, and almond extract (if using) and mix until combined.
  • Gradually add dry ingredients to wet mixture and mix until a soft dough forms.
  • Divide dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

2. Shape and Bake the Cookies

  • Preheat oven to 350°F (175°C).
  • Roll out chilled dough on a lightly floured surface to about ¼-inch thickness.
  • Use an Easter egg-shaped cookie cutter, or create a template and cut around it with a knife.
  • Transfer shapes to a parchment-lined baking sheet, spacing 1 inch apart.
  • Bake for 10–12 minutes, or until edges are lightly golden.
  • Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

3. Make the Cream Cheese Frosting

  • In a large bowl, beat cream cheese and butter until smooth and creamy.
  • Add powdered sugar, vanilla, and lemon juice (if using).
  • Beat until light and fluffy.
  • Refrigerate for 10–15 minutes before spreading for easier application.

4. Prepare the Fruit Toppings

  • Wash and dry fruit thoroughly. Slice and prep into thin, decorative pieces.
  • Choose bright, colorful fruits for contrast and visual appeal.

5. Assemble the Fruit Pizzas

  • Spread a layer of cream cheese frosting over each cooled cookie using a spatula or piping bag.
  • Arrange sliced fruit in fun Easter egg patterns—stripes, polka dots, zigzags, or floral designs.
  • Add optional sprinkles, mini marshmallows, or mint leaves for added decoration.

6. Serve or Store

  • Serve immediately for the best texture and appearance.
  • If preparing ahead, refrigerate assembled fruit pizzas in an airtight container for up to 12 hours.
  • For longer storage, keep cookies and frosting separate and assemble before serving.
