Instructions
1. Prepare the Sugar Cookie Dough
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream butter and sugar together until light and fluffy (2–3 minutes).
- Add egg, vanilla, and almond extract (if using) and mix until combined.
- Gradually add dry ingredients to wet mixture and mix until a soft dough forms.
- Divide dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Shape and Bake the Cookies
- Preheat oven to 350°F (175°C).
- Roll out chilled dough on a lightly floured surface to about ¼-inch thickness.
- Use an Easter egg-shaped cookie cutter, or create a template and cut around it with a knife.
- Transfer shapes to a parchment-lined baking sheet, spacing 1 inch apart.
- Bake for 10–12 minutes, or until edges are lightly golden.
- Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
3. Make the Cream Cheese Frosting
- In a large bowl, beat cream cheese and butter until smooth and creamy.
- Add powdered sugar, vanilla, and lemon juice (if using).
- Beat until light and fluffy.
- Refrigerate for 10–15 minutes before spreading for easier application.
4. Prepare the Fruit Toppings
- Wash and dry fruit thoroughly. Slice and prep into thin, decorative pieces.
- Choose bright, colorful fruits for contrast and visual appeal.
5. Assemble the Fruit Pizzas
- Spread a layer of cream cheese frosting over each cooled cookie using a spatula or piping bag.
- Arrange sliced fruit in fun Easter egg patterns—stripes, polka dots, zigzags, or floral designs.
- Add optional sprinkles, mini marshmallows, or mint leaves for added decoration.
6. Serve or Store
- Serve immediately for the best texture and appearance.
- If preparing ahead, refrigerate assembled fruit pizzas in an airtight container for up to 12 hours.
