- ½ cup (1 stick) unsalted butter, melted
- ¾ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking powder

- ½ cup white chocolate chips
- 8 chocolate sandwich cookies (Oreos), crushed
- ¼ cup rainbow sprinkles
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the egg and vanilla extract, whisking until fully incorporated.
Sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the wet mixture using a spatula or wooden spoon until just combined. Be careful not to overmix, as this can make the blondies dense.
Stir in the white chocolate chips, crushed Oreos, and sprinkles. Gently mix until evenly distributed throughout the batter.
Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula. Sprinkle a few extra cookie pieces and sprinkles on top for a decorative touch.
Place the pan in the preheated oven and bake for 22-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs. Avoid overbaking, as blondies will continue to set as they cool.
Allow the blondies to cool in the pan for at least 30 minutes before lifting them out using the parchment paper. Once cooled, slice into squares and serve.
