  • 1 tsp garlic powder
  • ½ tsp smoked paprika

For the Breading

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • ½ cup cornmeal
  • 1 tsp salt
  • ½ tsp black pepper

For Frying

  • 34 cups vegetable oil

For Serving

  • Ranch dressing, chipotle mayo, or your favorite dipping sauce

Instructions

Step 1: Prepare the Filling

  1. In a medium mixing bowl, combine shredded Monterey Jack cheese, cream cheese, diced jalapeños, garlic powder, and smoked paprika.
  2. Mix until well combined and smooth.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place on a parchment-lined baking sheet.
  4. Chill in the freezer for 1 hour to firm up.

Step 2: Set Up the Breading Station

  1. Place the flour in one shallow dish.
  2. Beat the eggs in a second shallow dish.
  3. In a third dish, combine the breadcrumbs, cornmeal, salt, and black pepper.

Step 3: Bread the Rattlesnake Bites

  1. Remove the cheese balls from the freezer.
  2. Coat each ball in flour, then dip it in the beaten egg, and finally roll it in the breadcrumb mixture, ensuring it is fully coated.
  3. Repeat the process for all the cheese balls, then place them back on the baking sheet.

Step 4: Heat the Oil

  1. Heat vegetable oil in a deep pot or skillet over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer to monitor the temperature for consistent frying.

Step 5: Fry the Rattlesnake Bites

  1. Fry the cheese balls in batches, 3-4 at a time, to avoid overcrowding the pot.
  2. Cook for 2-3 minutes, turning occasionally, until golden brown and crispy.
  3. Use a slotted spoon to transfer the bites to a plate lined with paper towels to drain excess oil.

Step 6: Serve and Enjoy

  1. Arrange the Rattlesnake Bites on a platter and serve warm with your favorite dipping sauce.
