Ingredients
For the French Toast:
- 8 slices of thick-cut bread (brioche or challah works best)
- 3 large eggs
- ½ cup whole milk (or almond milk)
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1 tbsp maple syrup or honey
- 1 tbsp butter (for cooking)
For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
For the Blackberry Compote:
- 1½ cups fresh or frozen blackberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch + 1 tbsp water (for thickening, optional)
Instructions
Step 1: Prepare the Blackberry Compote

In a small saucepan over medium heat, add the blackberries, honey (or maple syrup), and lemon juice.

Stir occasionally and let the blackberries break down as they release their juices, about 5 minutes.

If you prefer a thicker compote, mix 1 tsp cornstarch with 1 tbsp water and stir it into the blackberries. Cook for another 2 minutes until thickened.

Remove from heat and set aside.
Step 2: Make the Cream Cheese Filling

In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Spread a generous layer of the cream cheese mixture onto one side of four slices of bread.

Place another slice of bread on top to create a sandwich.
Step 3: Prepare the French Toast Batter

In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and maple syrup.
Step 4: Cook the French Toast

Heat a skillet or griddle over medium heat and melt 1 tbsp butter.

Dip each stuffed sandwich into the egg mixture, making sure to coat both sides evenly.

Place in the skillet and cook for 3-4 minutes per side, until golden brown and crispy.

Remove from heat and repeat with remaining sandwiches.
Step 5: Assemble and Serve

Place the stuffed French toast on a plate.

Spoon the warm blackberry compote over the top.
