Cream Cheese Stuffed Blackberry Compote French Toast

For the French Toast:

  • 8 slices of thick-cut bread (brioche or challah works best)
  • 3 large eggs
  • ½ cup whole milk (or almond milk)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 tbsp maple syrup or honey
  • 1 tbsp butter (for cooking)

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

For the Blackberry Compote:

  • 1½ cups fresh or frozen blackberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water (for thickening, optional)

Instructions

Step 1: Prepare the Blackberry Compote

  1. In a small saucepan over medium heat, add the blackberries, honey (or maple syrup), and lemon juice.

  2. Stir occasionally and let the blackberries break down as they release their juices, about 5 minutes.

  3. If you prefer a thicker compote, mix 1 tsp cornstarch with 1 tbsp water and stir it into the blackberries. Cook for another 2 minutes until thickened.

  4. Remove from heat and set aside.

Step 2: Make the Cream Cheese Filling

  1. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

  2. Spread a generous layer of the cream cheese mixture onto one side of four slices of bread.

  3. Place another slice of bread on top to create a sandwich.

Step 3: Prepare the French Toast Batter

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and maple syrup.

Step 4: Cook the French Toast

  1. Heat a skillet or griddle over medium heat and melt 1 tbsp butter.

  2. Dip each stuffed sandwich into the egg mixture, making sure to coat both sides evenly.

  3. Place in the skillet and cook for 3-4 minutes per side, until golden brown and crispy.

  4. Remove from heat and repeat with remaining sandwiches.

Step 5: Assemble and Serve

  1. Place the stuffed French toast on a plate.

  2. Spoon the warm blackberry compote over the top.

  3. Dust with powdered sugar and drizzle with maple syrup if desired.

  4. Serve immediately and enjoy!
