For the Chicken and Sauce:
- 2 boneless, skinless chicken breasts (or 3 if smaller)
- 1 tablespoon olive oil
- 2 teaspoons Cajun seasoning (store-bought or homemade)
- 1 teaspoon smoked paprika

- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes (optional, for extra heat)
- 1 cup chicken broth
- 1 cup heavy cream
- 4 oz cream cheese, cubed
- 1 cup shredded Parmesan cheese
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
For the Pasta:
- 12 oz penne or fettuccine pasta
- 1 tablespoon butter
- 2 tablespoons chopped fresh parsley (for garnish)
- Additional Cajun seasoning, to taste
Instructions
Step 1: Prepare the Chicken
- Pat the chicken breasts dry with paper towels, then rub them with olive oil.
- In a small bowl, mix the Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
- Rub the seasoning mixture all over the chicken breasts to coat them evenly.
Step 2: Slow Cook the Chicken
- Place the seasoned chicken breasts in the Crock Pot.
- Add the chicken broth, diced tomatoes with green chilies, and chopped bell peppers.
- Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken is fully cooked and tender.
Step 3: Shred the Chicken
- Once the chicken is cooked through, remove it from the Crock Pot and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir to mix it with the juices.
Step 4: Add the Creamy Ingredients
- Add the heavy cream, cream cheese, Parmesan cheese, and minced garlic to the Crock Pot.
- Stir well until the cheeses are melted and the sauce is smooth and creamy.
- Cover and let it cook for an additional 15–20 minutes on low to allow the flavors to blend.
Step 5: Cook the Pasta
- While the sauce finishes, cook the pasta according to package instructions until al dente.
- Drain the pasta and toss it with butter to prevent sticking.
Step 6: Assemble and Serve
- Stir the cooked pasta into the slow cooker, coating it evenly with the sauce.
- Garnish with fresh parsley and an extra sprinkle of Cajun seasoning if desired.
- Serve hot and enjoy!
