Instructions
Step 1: Cook the Tortellini
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, but reduce the cooking time by 1–2 minutes to keep them slightly firm.
- Drain and transfer the tortellini to a baking sheet lined with paper towels to dry and cool.
Step 2: Prepare the Breading Station
- In a shallow dish, place the flour.
- In a second shallow dish, whisk together the eggs and milk or water.
- In a third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and black pepper. Mix well.
Step 3: Bread the Tortellini
- Dredge each tortellini in the flour, shaking off any excess.
- Dip the floured tortellini into the egg mixture, ensuring it is fully coated.
- Press the tortellini into the breadcrumb mixture, coating evenly. Set the breaded tortellini on a plate. Repeat with all tortellini.
Step 4: Heat the Oil
- In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil to 350°F (175°C). Use a kitchen thermometer to maintain a consistent temperature.
Step 5: Fry the Tortellini
- Working in batches, carefully add the breaded tortellini to the hot oil, ensuring not to overcrowd the pan.
- Fry for 2–3 minutes, turning occasionally, until golden brown and crispy.
- Use a slotted spoon to remove the fried tortellini and transfer them to a plate lined with paper towels to drain excess oil.
Step 6: Serve and Garnish
- Transfer the fried tortellini to a serving platter. Sprinkle with grated Parmesan cheese and chopped parsley for garnish.
- Serve immediately with your choice of dipping sauces.
