For the sugar cookie crust:
- 1 cup unsalted butter, softened

For the cream cheese frosting:

- 1–2 tablespoons lemon juice or milk (for smooth consistency)
For the fruit topping:
- 1 kiwi, peeled and thinly sliced
- 1 cup fresh strawberries, sliced
- ½ cup blueberries
- ½ cup raspberries
- 1 small mango, peeled and sliced
- ½ cup grapes, halved
- Optional: 1 tablespoon honey or apricot jam (warmed for glaze)
Instructions
1. Make the sugar cookie dough
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, beating until smooth and well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
2. Shape and bake the crust
- Preheat the oven to 175°C (350°F).
- Line a large baking sheet or pizza pan with parchment paper.
- Roll the dough into a large oval or egg shape about ¼ inch thick. You can use a knife to trim the edges for a neater Easter egg outline.
- Bake for 12–15 minutes, or until the edges are just golden.
- Let the crust cool completely on the pan before decorating.
3. Prepare the frosting
- In a mixing bowl, beat softened cream cheese and butter until creamy.
- Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
- Add lemon juice or milk a little at a time to reach a spreadable consistency.
4. Frost the cookie base
- Once the cookie crust has fully cooled, spread the cream cheese frosting evenly across the surface.
- Smooth the top using an offset spatula or the back of a spoon.
5. Decorate with fruit
- Arrange your sliced fruit on top of the frosting in colorful patterns to resemble a decorated Easter egg.
- Alternate colors, shapes, and rows to create a visually striking design.
- Get creative—make stripes, dots, or floral shapes using different fruits.
6. Optional glaze
- For a glossy finish and to help preserve the fruit, brush a light glaze over the top using warm honey or melted apricot jam.
- Chill the fruit pizza in the refrigerator for at least 30 minutes before slicing and serving.
