Easy Baked Lamb Chops

  • Author: Olivia
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Lamb Chops:

  • 8 lamb loin or rib chops (about 1 inches thick)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Dijon mustard

Optional Garnishes:

  • Fresh rosemary sprigs
  • Lemon wedges

Instructions

1. Preheat the Oven

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

2. Prepare the Herb Mixture

  • In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, pepper, and Dijon mustard. This herb rub will add incredible flavor to the lamb chops.

3. Season the Lamb Chops

  • Pat the lamb chops dry with paper towels to remove excess moisture.
  • Rub the herb mixture evenly over both sides of the lamb chops, ensuring each chop is well coated.

4. Sear the Lamb Chops (Optional)

  • Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  • Sear the lamb chops for 2–3 minutes per side until browned. This step enhances the flavor and creates a beautiful crust but can be skipped if pressed for time.

5. Bake the Lamb Chops

  • Transfer the lamb chops to the prepared baking sheet. Arrange them in a single layer with space between each chop.
  • Bake in the preheated oven for 10–15 minutes, depending on your desired level of doneness:
    • Rare: 120–125°F (49–52°C)
    • Medium-rare: 130–135°F (54–57°C)
    • Medium: 140–145°F (60–63°C)
    • Well-done: 150°F+ (65°C+)
  • Use a meat thermometer to check the internal temperature for precise cooking.

6. Rest and Serve

  • Remove the lamb chops from the oven and let them rest for 5 minutes. This allows the juices to redistribute, ensuring tender and flavorful meat.
  • Garnish with fresh rosemary sprigs and serve with lemon wedges for a bright, citrusy finish.
