Ingredients
For the Potato Nests:
- 3 large russet potatoes, peeled and shredded
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 egg, beaten
- ¼ cup grated Parmesan cheese (optional, for extra crispiness)
- 2 tablespoons melted butter or olive oil
For the Filling (Choose One or More):
- 6 eggs, scrambled or soft-boiled and halved
- ½ cup shredded cheddar or mozzarella cheese
- ½ cup cooked crumbled turkey sausage or turkey bacon
- ½ cup sautéed spinach or bell peppers
- Cherry tomatoes, sliced for garnish
Instructions
Peel and shred three large russet potatoes using a box grater or food processor. Once shredded, place the potatoes in a clean kitchen towel and squeeze out as much moisture as possible. Removing excess water helps the nests crisp up beautifully.
Transfer the dried shredded potatoes to a mixing bowl. Add salt, pepper, garlic powder, onion powder, and grated Parmesan cheese (if using). Pour in the beaten egg and mix everything well until the mixture is evenly combined.
Grease a 12-cup muffin tin lightly with butter or non-stick spray. Take a small handful of the shredded potato mixture and press it into each muffin cup, making sure to create a nest-like shape with a hollow center. This is where the filling will go later.
Preheat your oven to 400°F (200°C). Brush the tops of the nests lightly with melted butter or olive oil to help them crisp up. Bake for 20-25 minutes, or until the nests are golden brown and crispy around the edges.
Once the potato nests are fully baked and crisp, remove them from the oven and let them cool slightly. Fill each nest with your choice of scrambled eggs, shredded cheese, turkey sausage, sautéed veggies, or soft-boiled egg halves.
Garnish with fresh herbs, sliced cherry tomatoes, or extra cheese for an elegant touch. Serve warm and enjoy these crispy, flavorful Edible Potato Nests as a fun and festive dish!
