Instructions
Follow these simple steps to create your own delicious Eggplant Rollatini:
1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare Eggplants: Slice the eggplants lengthwise into 1/4 inch thick slices. Sprinkle salt on them and let them sit for 20 minutes to draw out excess moisture.
3. Rinse and Squeeze: Rinse the eggplant slices under cold water to remove excess salt and moisture, then pat them dry with paper towels.
4. Roast Eggplants: Brush each slice with olive oil. Lay them on a baking sheet and roast for about 20 minutes, turning halfway through, until tender.
5. Prepare Filling: In a medium bowl, mix ricotta cheese, shredded mozzarella (reserve some for topping), grated Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper until well blended.
6. Assemble Rollatini: Spread about 2 tablespoons of the cheese mixture onto each roasted eggplant slice. Roll them up tightly and place seam side down in a baking dish.
7. Add Marinara Sauce: Pour half of the marinara sauce over the top of the rollatini. Sprinkle remaining mozzarella cheese on top.
8. Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10–15 minutes until the cheese is bubbly and golden.
9. Garnish: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil leaves.
