Ingredients
For the Shrimp:

- 1 lb large shrimp, peeled and deveined
- 1 ½ tbsp jerk seasoning (store-bought or homemade)
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Juice of ½ lime
For the Pasta and Sauce:
- 12 oz penne or fettuccine pasta
- 1 tbsp butter
- 1 tbsp olive oil
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- ½ red onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup coconut milk
- ½ cup heavy cream
- ½ cup chicken or vegetable broth
- ½ cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp allspice
- ½ tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 green onions, chopped (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Season the Shrimp
In a medium bowl, toss the shrimp with jerk seasoning, smoked paprika, garlic powder, lime juice, and olive oil. Ensure the shrimp are evenly coated, then let them marinate for 10–15 minutes while you prep the other ingredients.
Step 2: Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water for later.
Step 3: Sauté the Shrimp
Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and cook the shrimp for 2–3 minutes per side until they turn pink and opaque. Remove from the pan and set aside.
Step 4: Sauté the Vegetables
In the same skillet, melt 1 tbsp butter and add the sliced bell peppers, red onion, and minced garlic. Sauté for 3–4 minutes until the vegetables soften slightly.
Step 5: Prepare the Sauce
Reduce heat to medium-low and add the coconut milk, heavy cream, broth, Parmesan cheese, thyme, allspice, red pepper flakes, salt, and black pepper. Stir well and let the sauce simmer for 5 minutes, allowing the flavors to meld.
Step 6: Combine Everything
Add the cooked pasta and shrimp back into the skillet. Toss everything together, ensuring the pasta is well-coated with the creamy, spiced sauce. If needed, add a little reserved pasta water to loosen the sauce.
Step 7: Garnish and Serve
Remove from heat and garnish with chopped green onions and fresh parsley. Serve immediately and enjoy your flavorful Jamaican shrimp pasta!
