Fluffy Cottage Cheese Cloud Bread

  • Author: Olivia
  • Total Time: 45 minutes
  • Yield: 8 cloud bread rounds 1x

Ingredients

Scale
  • 3 large eggs, separated
  • ½ cup cottage cheese (full-fat for creaminess, low-fat for a lighter version)
  • ¼ teaspoon cream of tartar (to stabilize the egg whites)
  • ½ teaspoon baking powder (for extra fluffiness)
  • ¼ teaspoon salt
  • ½ teaspoon garlic powder (optional, for a savory version)
  • ½ teaspoon honey or sugar (optional, for a slight sweetness)

Instructions

Step 1: Preheat the Oven and Prepare the Baking Sheet

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and lightly grease it with a bit of cooking spray or butter to prevent sticking.

Step 2: Separate the Eggs

Carefully separate the egg whites from the yolks. Place the whites in one large bowl and the yolks in another. Be careful not to let any yolk get into the whites, as even a small amount of fat can prevent them from whipping up properly.

Step 3: Whip the Egg Whites

Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat on high speed for 3-4 minutes, or until stiff peaks form. This means that when you lift the beaters, the peaks should stand up without collapsing. This step is crucial because it gives the cloud bread its light, airy texture.

Step 4: Blend the Cottage Cheese and Egg Yolks

In the bowl with the egg yolks, add the cottage cheese, baking powder, salt, and any optional flavorings (garlic powder for savory, honey for sweet). Blend until smooth using a fork or small whisk. The mixture should be creamy and well combined.

Step 5: Fold the Egg Whites into the Cottage Cheese Mixture

Gently fold the egg whites into the cottage cheese mixture using a spatula. Do this in batches—start with a third of the egg whites, mix gently, then fold in the rest. Be very gentle to avoid deflating the mixture. The goal is to maintain as much air as possible.

Step 6: Form the Cloud Bread Rounds

Using a spoon or ladle, scoop small mounds of the batter onto the prepared baking sheet. Space them at least 2 inches apart since they will spread slightly as they bake.

Step 7: Bake to Golden Perfection

Bake for 25-30 minutes, or until the tops are golden brown and slightly firm to the touch. Avoid opening the oven too soon, as this can cause the bread to collapse.

Step 8: Cool and Enjoy

Once baked, let the cloud bread cool completely on the baking sheet for about 10 minutes before transferring to a wire rack. This helps them firm up and develop their soft texture.
