Instructions

Step 1: Preheat Your Oven

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Wash and scrub the baby potatoes thoroughly to remove any dirt. Pat them dry with a kitchen towel. If your potatoes are slightly larger, you can cut them in half to ensure they cook evenly.

In a large mixing bowl, combine the potatoes, olive oil, salt, black pepper, paprika, and dried oregano or thyme. Toss until all the potatoes are evenly coated in the seasoning mixture.
