Garlic Parmesan Chicken Skewers

  • Author: Olivia
  • Total Time: 50-55 minutes
  • Yield: 6 skewers 1x

Ingredients

Scale
  • 1 ½ pounds boneless, skinless chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh parsley, chopped (optional, for garnish)
  • Wooden or metal skewers

Instructions

  1. Prepare the Chicken: Start by cutting the chicken breasts into uniform 1-inch cubes to ensure even cooking. Pat them dry with paper towels to help the marinade stick better.
  2. Make the Marinade: In a medium bowl, whisk together olive oil, minced garlic, grated Parmesan, Italian seasoning, paprika, salt, pepper, and lemon juice. The mixture should form a thick, flavorful paste.
  3. Marinate the Chicken: Add the chicken cubes to the bowl and toss to coat evenly with the marinade. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for maximum flavor).
  4. Soak Skewers (if using wooden skewers): While the chicken marinates, soak wooden skewers in water for 30 minutes to prevent burning during cooking.
  5. Assemble the Skewers: Thread the marinated chicken onto the skewers, leaving a small gap between each piece for even cooking.
  6. Preheat the Grill: If using an outdoor grill, preheat it to medium-high heat (around 375°F). If using a stovetop grill pan, heat it over medium-high heat and lightly grease with oil.
  7. Cook the Skewers: Place the skewers on the grill and cook for 12-15 minutes, turning every 3-4 minutes to ensure all sides are cooked evenly. The chicken should be golden brown and have an internal temperature of 165°F.
  8. Garnish and Serve: Remove the skewers from the grill and sprinkle with fresh parsley for garnish. Serve hot and enjoy!
