- 4 cod fillets (6 oz each)
- 2 tbsp olive oil
- 3 tbsp soy sauce (low sodium preferred)
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 garlic cloves, minced
- 1 tsp sesame oil
- 1 tsp cornstarch (optional, for thickening glaze)
- 1 tbsp water (if using cornstarch)
- 1 tbsp sesame seeds (for garnish)
- 2 green onions, thinly sliced (for garnish)
Instructions
- Prepare the Glaze:
- In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil. Taste and adjust the sweetness or saltiness as needed.
- Cook the Cod:
- Heat olive oil in a large non-stick skillet over medium heat. Pat the cod fillets dry with a paper towel and season lightly with salt and pepper.
- Place the fillets in the skillet and sear for 3–4 minutes on one side until golden brown. Carefully flip the fillets and cook for another 3 minutes, or until the fish flakes easily with a fork. Remove the cod from the skillet and set aside.
- Make the Glaze:
- In the same skillet, pour in the prepared soy-ginger mixture. Bring to a gentle simmer.
- For a thicker glaze, mix cornstarch and water in a small bowl to form a slurry. Stir this mixture into the simmering glaze and cook for 1–2 minutes until thickened.
- Coat the Cod:
- Return the cooked cod fillets to the skillet, spooning the glaze over each fillet to coat evenly. Allow the fish to warm through in the glaze for 1–2 minutes.
- Garnish and Serve:
- Transfer the glazed cod to serving plates and sprinkle with sesame seeds and sliced green onions. Serve immediately with your favorite side dishes.
