  • 1 tablespoon of olive oil (for sautéing mushrooms)
  • 1 clove of garlic, minced
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of Italian seasoning (optional)
  • A handful of fresh parsley or chives, chopped (optional, for garnish)

Instructions

  1. Prepare the mushrooms:
    Start by cleaning the mushrooms with a damp cloth or a soft brush to remove dirt. Avoid washing them under running water as mushrooms absorb moisture. Slice them thinly for even cooking.
  2. Sauté the mushrooms:
    Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Toss in the sliced mushrooms, season with salt, pepper, and Italian seasoning, and cook for 5-7 minutes. Stir occasionally until the mushrooms are soft and golden. Remove from heat and set aside.
  3. Assemble the sandwich:
    Spread a thin layer of butter on one side of each bread slice. Lay two slices of bread on a clean surface, buttered side down. Evenly distribute the sautéed mushrooms over the bread, then sprinkle shredded cheese on top. Place the remaining slices of bread on top, buttered side up.
  4. Grill the sandwich:
    Heat a non-stick skillet or griddle over medium heat. Place the assembled sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is fully melted.
  5. Serve hot:
    Transfer the grilled sandwiches to a plate, cut them diagonally, and serve immediately. Garnish with fresh parsley or chives if desired.
