- 1 cup of shredded cheese (cheddar, mozzarella, or a combination)

- 1 tablespoon of olive oil (for sautéing mushrooms)
- 1 clove of garlic, minced
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of Italian seasoning (optional)
- A handful of fresh parsley or chives, chopped (optional, for garnish)
Instructions
- Prepare the mushrooms:
Start by cleaning the mushrooms with a damp cloth or a soft brush to remove dirt. Avoid washing them under running water as mushrooms absorb moisture. Slice them thinly for even cooking. - Sauté the mushrooms:
Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Toss in the sliced mushrooms, season with salt, pepper, and Italian seasoning, and cook for 5-7 minutes. Stir occasionally until the mushrooms are soft and golden. Remove from heat and set aside. - Assemble the sandwich:
Spread a thin layer of butter on one side of each bread slice. Lay two slices of bread on a clean surface, buttered side down. Evenly distribute the sautéed mushrooms over the bread, then sprinkle shredded cheese on top. Place the remaining slices of bread on top, buttered side up. - Grill the sandwich:
Heat a non-stick skillet or griddle over medium heat. Place the assembled sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is fully melted. - Serve hot:
Transfer the grilled sandwiches to a plate, cut them diagonally, and serve immediately. Garnish with fresh parsley or chives if desired.
