Handmade Sub Rolls

  • Author: Olivia
  • Total Time: 2 hours 30 minutes (including proofing)
  • Yield: 8 standard sub rolls 1x

Ingredients

Scale

For the Dough

  • 3 ½ cups all-purpose flour (plus more for kneading)
  • 2 tablespoons sugar
  • 2 ¼ teaspoons (1 packet) instant dry yeast
  • 1 ½ teaspoons salt
  • 1 cup warm water (110°F/43°C)
  • ¼ cup warm milk
  • 3 tablespoons neutral oil (vegetable or sunflower oil)
  • 1 large egg

For Topping (Optional)

  • 1 egg yolk mixed with 1 tablespoon milk (egg wash)
  • Sesame seeds or rolled oats

Instructions

1. Activate the Yeast

  • In a large mixing bowl, combine warm water, warm milk, sugar, and yeast.
  • Let sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.

2. Add Wet and Dry Ingredients

  • Add oil, egg, salt, and half the flour to the yeast mixture. Stir to combine.
  • Gradually add the remaining flour, mixing until a soft dough begins to form.

3. Knead the Dough

  • Turn the dough onto a floured surface and knead for 8–10 minutes until smooth and elastic.
  • If using a stand mixer, knead with a dough hook for 6–7 minutes.

4. First Rise

  • Place the kneaded dough in a lightly oiled bowl. Cover with a clean towel or plastic wrap.
  • Let it rise in a warm spot for 1–1.5 hours or until doubled in size.

5. Shape the Sub Rolls

  • Punch down the dough and divide it into 8 equal portions.
  • Roll each piece into an oblong sub roll shape, about 6 inches long.
  • Place the rolls on a baking tray lined with parchment paper, leaving space between each.

6. Second Rise

  • Cover the rolls loosely with a towel and let rise for 30–40 minutes until puffy.

7. Preheat the Oven

  • While the rolls are rising, preheat your oven to 375°F (190°C).

8. Add Toppings

  • If desired, brush each roll with the egg wash for a glossy finish.
  • Sprinkle sesame seeds or oats on top for extra texture and visual appeal.

9. Bake

  • Bake for 18–20 minutes, or until the rolls are golden brown and sound hollow when tapped underneath.
  • Cool on a wire rack before slicing or storing.

10. Serve

  • Slice and fill with your favorite sandwich ingredients—grilled chicken, beef, veggies, or cheese melts.
  • These rolls hold up well to hot fillings and sauces without becoming soggy.
