  • 6 strips halal beef bacon, chopped into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons honey (raw or regular)
  • 1 tablespoon Dijon mustard (optional for added tang)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 teaspoon red pepper flakes (optional for a mild kick)

Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easier cleanup and even roasting.

2. Prepare the Potatoes

Wash the potatoes thoroughly. Halve or quarter them so they are all roughly the same size for even cooking.

3. Season the Potatoes

In a large mixing bowl, combine the potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until each piece is well coated.

4. Arrange on Baking Sheet

Spread the potatoes in a single layer on the baking sheet. Avoid overcrowding the pan, which could cause steaming rather than roasting.

5. Add the Halal Bacon

Scatter the chopped halal beef bacon evenly across the potatoes. The rendered fat from the bacon will flavor and crisp the potatoes during roasting.

6. Roast the Potatoes and Bacon

Roast in the preheated oven for 30–35 minutes. Halfway through cooking, toss the potatoes to ensure even browning and bacon crispiness.

7. Make the Honey Glaze

While the potatoes are roasting, prepare the glaze by whisking together the honey and Dijon mustard (if using) in a small bowl.

8. Glaze the Potatoes

Remove the baking sheet from the oven with 5–7 minutes of cooking time remaining. Drizzle the honey glaze over the potatoes and bacon, and gently toss to coat. Return to the oven for the final roasting phase.

9. Finish and Garnish

Once the potatoes are golden brown and crispy, remove them from the oven. Garnish with chopped parsley and red pepper flakes if desired.

10. Serve
