For the Beans:
- 1 pound kielbasa sausage, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can baked beans
For the Sauce:
- 1/2 cup barbecue sauce (your favorite variety)
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder (optional, for heat)
- Salt and black pepper, to taste
Instructions
Step 1: Cook the Kielbasa
- Heat the olive oil in a large skillet or Dutch oven over medium heat.
- Add the kielbasa slices in a single layer and cook for 3–5 minutes until browned on both sides. Remove from the skillet and set aside.
Step 2: Sauté the Aromatics
- In the same skillet, add the diced onion and garlic.
- Sauté for 2–3 minutes over medium heat, stirring frequently, until the onion is softened and fragrant.
Step 3: Combine Ingredients
- Return the browned kielbasa to the skillet.
- Add the pinto beans, kidney beans, and baked beans.
- Stir in the barbecue sauce, ketchup, brown sugar, Worcestershire sauce, smoked paprika, and chili powder.
Step 4: Simmer the Dish
- Reduce the heat to low and let the mixture simmer uncovered for 15–20 minutes.
- Stir occasionally to prevent sticking and ensure the flavors meld together.
Step 5: Serve
- Adjust seasoning with salt and black pepper to taste.
- Serve warm with cornbread, crusty bread, or as a side dish to grilled meats.
