Instructions
Creating a delicious Lentil Curry is straightforward with these simple steps:
1. Rinse Lentils: Rinse the lentils under cold water and set aside.
2. Heat Oil: In a large pot over medium heat, add olive oil to the pot and let it warm up.
3. Sauté Aromatics: Add chopped onions to the pot and sauté for about 3-4 minutes, until they become translucent.
4. Add Garlic and Ginger: Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
5. Spice it Up: Add ground cumin, coriander, turmeric, and garam masala, stirring well to coat the onions. Cook for about 1 minute.
6. Incorporate Tomatoes: Pour in the diced tomatoes (with their juices) and bring the mixture to a simmer.
7. Add Lentils and Liquid: Add the rinsed lentils along with coconut milk and vegetable broth. Stir everything together.
8. Simmer: Bring the curry to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the lentils are tender.
9. Mix in Spinach: Stir in the spinach until it wilts. This should take about 2 minutes.
10. Season: Add salt and black pepper to taste, adjusting seasonings as desired.
11. Serve: Remove from heat and let it sit for a few minutes. Serve warm, garnished with fresh cilantro.
