For the Salmon:

  • 4 salmon fillets (6 ounces each), skin-on or skinless
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

For the Sauce:

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup (240ml) heavy cream (or half-and-half for a lighter option)
  • ½ cup (50g) grated Parmesan cheese
  • ½ cup (75g) sun-dried tomatoes, chopped (oil-packed preferred)
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

Step 1: Prepare the Salmon

  1. Pat the salmon fillets dry with a paper towel to remove excess moisture.
  2. Season both sides of the salmon with paprika, garlic powder, salt, and pepper.

Step 2: Sear the Salmon

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Place the salmon fillets skin-side down (if using skin-on) and sear for 3–4 minutes, until the skin is crispy and golden. Flip the fillets and cook for another 2–3 minutes.
  3. Remove the salmon from the skillet and set aside.

Step 3: Make the Sauce

  1. Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and sauté for 1 minute, until fragrant.
  2. Pour in the heavy cream and bring to a gentle simmer, stirring frequently.
  3. Add the Parmesan cheese, stirring until melted and the sauce thickens slightly.
  4. Stir in the sun-dried tomatoes, red pepper flakes (if using), Italian seasoning, salt, and black pepper. Simmer for 2–3 minutes to combine flavors.

Step 4: Combine Salmon and Sauce

  1. Return the seared salmon fillets to the skillet, nestling them into the sauce.
  2. Spoon the sauce over the salmon to coat. Simmer for 3–5 minutes, or until the salmon is cooked through (internal temperature of 145°F or 63°C).
  3. Sprinkle fresh basil over the dish just before serving.

Step 5: Serve

  1. Transfer the salmon fillets to serving plates, spooning extra sauce over each portion.
  2. Pair with sides like mashed potatoes, rice, pasta, or roasted vegetables for a complete meal.
