For the Base:
- 4 large flour tortillas (10-inch size)
- 1 tablespoon olive oil
For the Filling:
- 1/2 pound ground beef or ground turkey
- 1 packet taco seasoning (or homemade, see variation below)
- 1/4 cup water
- 1/2 cup refried beans (homemade or canned)
For the Toppings:
- 1 cup shredded cheddar or Mexican-blend cheese
- 1/4 cup salsa or taco sauce
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup diced red onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced green onions
- 1/2 avocado, diced or sliced (optional)
- 1/4 cup sour cream (optional)
Instructions
Step 1: Prepare the Tortilla Base
- Preheat your oven to 400°F (200°C).
- Lightly brush both sides of the tortillas with olive oil. Place them on a baking sheet or pizza stone in a single layer.
- Bake for 4-5 minutes per side, or until the tortillas are golden and crisp. Remove from the oven and set aside.
Step 2: Cook the Meat Filling
- Heat a skillet over medium heat and add the ground beef or turkey. Cook, breaking it apart with a spatula, until fully browned and cooked through, about 5-7 minutes.
- Drain any excess grease, then stir in the taco seasoning and water. Simmer for 2-3 minutes until the meat is well-coated and the liquid is absorbed. Remove from heat.
Step 3: Assemble the Mexican Pizzas
- Spread a thin layer of refried beans over each tortilla. This will act as a “sauce” and help hold the toppings in place.
- Sprinkle the seasoned meat evenly over the refried beans.
- Drizzle salsa or taco sauce over the meat layer.
- Top with shredded cheese, ensuring an even distribution.
Step 4: Bake the Pizzas
- Return the assembled pizzas to the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly.
Step 5: Add Fresh Toppings and Serve
- Once slightly cooled, garnish the pizzas with fresh toppings such as diced tomatoes, black olives, red onions, cilantro, and green onions. Add avocado and sour cream, if desired.
- Slice the pizzas into wedges or quarters and serve warm.
