For the Filling:

  • 1/2 pound ground beef or ground turkey

  • 1/4 cup water
  • 1/2 cup refried beans (homemade or canned)

For the Toppings:

  • 1 cup shredded cheddar or Mexican-blend cheese
  • 1/4 cup salsa or taco sauce
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/2 avocado, diced or sliced (optional)
  • 1/4 cup sour cream (optional)

Instructions

Step 1: Prepare the Tortilla Base

  1. Preheat your oven to 400°F (200°C).
  2. Lightly brush both sides of the tortillas with olive oil. Place them on a baking sheet or pizza stone in a single layer.
  3. Bake for 4-5 minutes per side, or until the tortillas are golden and crisp. Remove from the oven and set aside.

Step 2: Cook the Meat Filling

  1. Heat a skillet over medium heat and add the ground beef or turkey. Cook, breaking it apart with a spatula, until fully browned and cooked through, about 5-7 minutes.
  2. Drain any excess grease, then stir in the taco seasoning and water. Simmer for 2-3 minutes until the meat is well-coated and the liquid is absorbed. Remove from heat.

Step 3: Assemble the Mexican Pizzas

  1. Spread a thin layer of refried beans over each tortilla. This will act as a “sauce” and help hold the toppings in place.
  2. Sprinkle the seasoned meat evenly over the refried beans.
  3. Drizzle salsa or taco sauce over the meat layer.
  4. Top with shredded cheese, ensuring an even distribution.

Step 4: Bake the Pizzas

  1. Return the assembled pizzas to the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let cool slightly.

Step 5: Add Fresh Toppings and Serve

  1. Once slightly cooled, garnish the pizzas with fresh toppings such as diced tomatoes, black olives, red onions, cilantro, and green onions. Add avocado and sour cream, if desired.
  2. Slice the pizzas into wedges or quarters and serve warm.
