Creating Mini Chicken Quesadillas is straightforward. Follow these simple steps to ensure perfect results:

1. Prepare Chicken: If you haven’t already, shred the cooked chicken and place it in a bowl. Mix in taco seasoning until well combined.
2. Sauté Vegetables: In a skillet over medium heat, add 1 tablespoon of olive oil. Add diced onions and bell peppers (if using) and sauté until they’re softened, about 3-4 minutes.
3. Combine Ingredients: In the bowl with the chicken, add the sautéed vegetables and shredded cheese. Stir until everything is mixed well.
