Ingredients
- 2 ½ cups granulated sugar
- ½ cup water
- ½ cup light corn syrup
- 1 package (3 oz) Jell-O, any flavor
- 2 large egg whites
- 1 teaspoon vanilla extract
- ½ cup chopped pecans or walnuts (optional)
Instructions
Line a baking sheet with parchment paper or lightly grease it with butter to prevent sticking. If using nuts, chop them finely and set them aside.
In a medium saucepan over medium heat, combine the sugar, water, and corn syrup. Stir occasionally until the sugar dissolves, then stop stirring and let the mixture come to a rolling boil. Boil for about 5 minutes, or until the syrup reaches a soft-ball stage (235°F if using a thermometer).
While the syrup is boiling, beat the egg whites in a large mixing bowl using an electric mixer on high speed until stiff peaks form.
Once the syrup reaches the correct temperature, remove it from the heat and stir in the Jell-O powder, mixing until fully dissolved.
With the mixer running on medium speed, slowly pour the hot syrup into the beaten egg whites in a thin, steady stream. Continue beating for 6-8 minutes, or until the mixture thickens, loses its shine, and holds its shape. Add vanilla extract and nuts (if using) and mix until incorporated.
Using two spoons or a small cookie scoop, drop rounded mounds of the divinity mixture onto the prepared baking sheet. Let them sit at room temperature for at least 2 hours, or until fully set.
Once the divinity is firm, serve and enjoy. Store in an airtight container at room temperature for up to a week.
