  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup elbow macaroni or egg noodles
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup cottage cheese
  • 2 tablespoons butter
  • ½ teaspoon paprika (optional, for extra flavor)
  • ¼ cup chopped parsley (for garnish)

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Add the elbow macaroni (or egg noodles) and cook according to the package instructions until al dente. Drain and set aside.

Step 2: Brown the Meat

In a large skillet over medium heat, melt the butter. Add the diced onion and cook for 2–3 minutes until softened. Add the garlic and cook for another minute. Then, add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess grease.

Step 3: Season the Meat

Stir in the salt, black pepper, Italian seasoning, and paprika. Pour in the tomato sauce and diced tomatoes. Mix well and let the mixture simmer for 5 minutes to allow the flavors to meld.

Step 4: Prepare the Cheese Mixture

In a small bowl, combine the sour cream and cottage cheese. Stir well until smooth.

Step 5: Assemble the Casserole

Preheat your oven to 350°F (175°C). In a greased 9×13-inch baking dish, layer half of the cooked pasta. Spread half of the meat mixture over the pasta, followed by half of the sour cream mixture. Sprinkle with a layer of cheddar cheese. Repeat with the remaining pasta, meat, sour cream mixture, and cheese.

Step 6: Bake

Cover the casserole with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

Step 7: Garnish and Serve

Remove from the oven and let it sit for 5 minutes. Garnish with chopped parsley and serve warm.
