  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix of both)
  • 1/4 cup cooked bacon or sausage, crumbled (optional)
  • 1/4 cup cooked spinach or other vegetables (such as mushrooms, bell peppers, or onions)
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional, for garnish)
  • Butter, for greasing

Instructions

1. Preheat Your Oven

Start by preheating your oven to 375°F (190°C). While the oven is warming up, prepare your bagels. You can use any type of bagel you prefer, but a simple plain bagel works wonderfully with the rich quiche filling.

2. Hollow Out the Bagels

Using a small knife or spoon, carefully cut out the center of each bagel to create a hollow space. Be sure to leave a border around the edges so the bagel doesn’t fall apart. Set the bagel halves aside.

3. Prepare the Quiche Filling

In a mixing bowl, crack the eggs and whisk them together. Add the heavy cream and continue whisking until the mixture is smooth and combined. Stir in the cheese, and season with salt and pepper to taste. If you’re adding bacon, sausage, spinach, or any other vegetables, mix them into the egg mixture.

4. Stuff the Bagels

Carefully spoon the quiche filling into the hollowed-out bagels, filling them all the way to the top. You want the bagels to be packed with the creamy, cheesy filling. Make sure you don’t overfill them, as you want the egg mixture to settle and cook evenly.

5. Bake the Stuffed Bagels

Place the stuffed bagels on a baking sheet and bake for 15-20 minutes or until the eggs are fully set, and the tops of the bagels are golden brown. You can check doneness by inserting a toothpick or fork into the quiche center—the egg mixture should not be runny.

6. Garnish and Serve

Once the quiche stuffed bagels are done baking, remove them from the oven and let them cool for a minute or two. Sprinkle some chopped fresh parsley on top for a burst of color and freshness. Then, slice the bagels in half if you wish and serve them warm.
