For the Burger Patties:

For the Onion Rings:
- 1 large yellow onion, sliced into ½-inch rings
- 1 cup all-purpose flour
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup buttermilk
- 1 cup breadcrumbs or panko
- Vegetable oil (for frying)
For the Rodeo Sauce:
- ½ cup barbecue sauce
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
Additional Toppings:
- 4 slices cheddar cheese or smoked gouda
- 4 burger buns (brioche or sesame seed buns work well)
- 8–12 pickle slices (optional)
- Lettuce leaves (optional)
Instructions
Step 1: Prepare the Burger Patties
- In a large mixing bowl, combine the ground beef, salt, pepper, smoked paprika, garlic powder, and onion powder. Mix gently with your hands until just combined. Avoid overmixing to keep the patties tender.
- Divide the mixture into 4 equal portions and shape them into round patties about ¾-inch thick. Make a small indentation in the center of each patty to prevent puffing during cooking.
Step 2: Make the Onion Rings
- In a shallow bowl, mix the flour, paprika, salt, and pepper.
- Place the buttermilk in a second bowl and the breadcrumbs in a third bowl.
- Dip each onion ring into the flour mixture, then into the buttermilk, and finally into the breadcrumbs, ensuring they are fully coated.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the onion rings in batches for 2–3 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
Step 3: Cook the Burger Patties
- Preheat a grill or skillet over medium-high heat. Lightly oil the surface to prevent sticking.
- Cook the patties for 3–4 minutes per side, or until they reach your desired level of doneness (135°F/57°C for medium-rare, 145°F/63°C for medium). During the last minute of cooking, place a slice of cheese on each patty and cover the pan or grill to melt the cheese.
Step 4: Toast the Buns
- Slice the burger buns in half and toast them on the grill or skillet until lightly golden.
Step 5: Assemble the Rodeo Burgers
- Spread a generous layer of the Rodeo sauce on the bottom bun.
- Add a lettuce leaf (if using), followed by the cheese-topped burger patty.
- Top the patty with 2–3 onion rings, a drizzle of barbecue sauce, and pickle slices (optional).
- Place the top bun on the burger and press gently to hold everything together.
Step 6: Serve and Enjoy
- Serve the burgers immediately with your favorite sides, such as fries, coleslaw, or a fresh salad.
