Ingredients
Scale
- 6 large eggs
- 2 tbsp milk or heavy cream
- 1 tbsp butter or olive oil
- 2 Polish kielbasa sausages (approximately 8 oz), sliced into thin rounds
- 1 small onion, finely chopped
- ½ cup diced bell pepper (any color, optional)
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ tsp black pepper
- Salt to taste
- 2 tbsp fresh parsley or chives, chopped (for garnish)
- Optional sides: toasted bread, avocado slices, or roasted potatoes
Instructions
Step 1: Prepare the Ingredients
- Slice the kielbasa into thin rounds, ensuring even cooking.
- Finely chop the onion and dice the bell pepper, if using.
- In a mixing bowl, crack the eggs and whisk them together with milk or cream. Add a pinch of salt and black pepper for seasoning.
Step 2: Cook the Kielbasa
- Heat a large skillet over medium heat and add 1 tablespoon of butter or olive oil.
- Once the butter is melted and foamy, add the sliced kielbasa to the skillet in a single layer.
- Cook for 3-4 minutes on each side until the kielbasa is golden brown and slightly crispy. Remove the kielbasa from the skillet and set aside, leaving any rendered fat in the pan.
Step 3: Sauté the Vegetables
- In the same skillet, add the chopped onion and diced bell pepper. Sauté for 3-4 minutes, stirring frequently, until the onion becomes translucent and the pepper softens.
- Season the vegetables with smoked paprika, garlic powder, and a pinch of salt.
Step 4: Cook the Scrambled Eggs
- Lower the heat to medium-low and push the sautéed vegetables to one side of the skillet.
- Pour the whisked eggs into the empty side of the skillet and let them sit undisturbed for 20-30 seconds.
- Using a spatula, gently fold the eggs, cooking slowly to achieve a soft, fluffy texture.
Step 5: Combine and Serve
- Once the eggs are about halfway cooked, fold in the cooked kielbasa and combine everything in the skillet.
- Continue cooking for another 1-2 minutes until the eggs are fully set but still moist.
- Remove from heat and garnish with fresh parsley or chives. Serve immediately with your choice of sides.
