  • 2 tbsp milk or heavy cream
  • 1 tbsp butter or olive oil
  • 2 Polish kielbasa sausages (approximately 8 oz), sliced into thin rounds
  • 1 small onion, finely chopped
  • ½ cup diced bell pepper (any color, optional)
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • Salt to taste
  • 2 tbsp fresh parsley or chives, chopped (for garnish)
  • Optional sides: toasted bread, avocado slices, or roasted potatoes

Instructions

Step 1: Prepare the Ingredients

  1. Slice the kielbasa into thin rounds, ensuring even cooking.
  2. Finely chop the onion and dice the bell pepper, if using.
  3. In a mixing bowl, crack the eggs and whisk them together with milk or cream. Add a pinch of salt and black pepper for seasoning.

Step 2: Cook the Kielbasa

  1. Heat a large skillet over medium heat and add 1 tablespoon of butter or olive oil.
  2. Once the butter is melted and foamy, add the sliced kielbasa to the skillet in a single layer.
  3. Cook for 3-4 minutes on each side until the kielbasa is golden brown and slightly crispy. Remove the kielbasa from the skillet and set aside, leaving any rendered fat in the pan.

Step 3: Sauté the Vegetables

  1. In the same skillet, add the chopped onion and diced bell pepper. Sauté for 3-4 minutes, stirring frequently, until the onion becomes translucent and the pepper softens.
  2. Season the vegetables with smoked paprika, garlic powder, and a pinch of salt.

Step 4: Cook the Scrambled Eggs

  1. Lower the heat to medium-low and push the sautéed vegetables to one side of the skillet.
  2. Pour the whisked eggs into the empty side of the skillet and let them sit undisturbed for 20-30 seconds.
  3. Using a spatula, gently fold the eggs, cooking slowly to achieve a soft, fluffy texture.

Step 5: Combine and Serve

  1. Once the eggs are about halfway cooked, fold in the cooked kielbasa and combine everything in the skillet.
  2. Continue cooking for another 1-2 minutes until the eggs are fully set but still moist.
  3. Remove from heat and garnish with fresh parsley or chives. Serve immediately with your choice of sides.
