1. Prepare the Filling: In a bowl, mix the shredded chicken, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.
2. Preheat the Pan: Heat a large skillet over medium heat and add a little butter to coat the bottom.
3. Slice the Croissants: Carefully cut each croissant in half horizontally, creating a top and bottom.
4. Assemble the Sandwiches: Spread a generous amount of the chicken mixture on the bottom half of each croissant. Top with cheese and a handful of spinach or arugula.
