1. Preheat the Sous Vide Machine: Set your sous vide machine to the desired temperature. For creamy soft-boiled eggs, aim for 145°F (63°C). For firmer yolks, increase the temperature to 150°F (65.5°C).
2. Prepare the Eggs: Place the fresh eggs still in their shells into a vacuum-sealed bag. You can add seasoning to the bag if you prefer, though it’s not necessary.
3. Seal the Bag: Remove air from the bag using a vacuum sealer, ensuring the eggs are snug and won’t roll around during cooking.
4. Submerge the Eggs: Place the sealed bag in the preheated water bath. Make sure the eggs are fully submerged.
5. Cook: Allow the eggs to cook for 45 minutes. You can adjust the cooking time slightly if you want a softer or firmer yolk.
