  • 1 tbsp sesame oil (to prevent sticking)

For the Chili Garlic Oil

  • ¼ cup vegetable oil
  • 4 cloves garlic, minced
  • 2 tbsp red chili flakes (adjust to taste)
  • 1 tbsp sesame seeds
  • 1 tsp soy sauce
  • ½ tsp sugar

For the Sauce

  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce (for color and depth)
  • 1 tbsp rice vinegar
  • 1 tsp chili oil or chili paste (optional for extra heat)
  • 1 tsp toasted sesame oil

Optional Toppings

  • Chopped green onions
  • Crushed peanuts or cashews
  • Fresh cilantro
  • Fried shallots
  • Lime wedges

Instructions

Step 1: Cook the Noodles

  1. Bring a large pot of salted water to a boil.
  2. Cook the noodles according to package instructions until al dente. Drain and toss with 1 tbsp sesame oil to prevent sticking. Set aside.

Step 2: Make the Chili Garlic Oil

  1. Heat ¼ cup vegetable oil in a small saucepan over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Stir in the red chili flakes and sesame seeds. Cook for an additional 30 seconds, then remove from heat.
  4. Mix in soy sauce and sugar, stirring until combined.

Step 3: Prepare the Sauce

  1. In a small bowl, combine light soy sauce, dark soy sauce, rice vinegar, chili oil (if using), and toasted sesame oil.
  2. Whisk until smooth and set aside.

Step 4: Toss the Noodles

  1. Place the cooked noodles in a large mixing bowl.
  2. Pour the chili garlic oil over the noodles, followed by the sauce.
  3. Toss the noodles until evenly coated, using tongs or chopsticks.

Step 5: Add Toppings and Serve

  1. Transfer the noodles to serving bowls.
  2. Garnish with chopped green onions, crushed peanuts, fresh cilantro, fried shallots, or lime wedges as desired.
  3. Serve warm and enjoy!
