For the Noodles
- 8 oz dried wheat noodles (lo mein, udon, or spaghetti)
- 1 tbsp sesame oil (to prevent sticking)
For the Chili Garlic Oil
- ¼ cup vegetable oil
- 4 cloves garlic, minced
- 2 tbsp red chili flakes (adjust to taste)
- 1 tbsp sesame seeds
- 1 tsp soy sauce
- ½ tsp sugar
For the Sauce
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce (for color and depth)
- 1 tbsp rice vinegar
- 1 tsp chili oil or chili paste (optional for extra heat)
- 1 tsp toasted sesame oil
Optional Toppings
- Chopped green onions
- Crushed peanuts or cashews
- Fresh cilantro
- Fried shallots
- Lime wedges
Instructions
Step 1: Cook the Noodles
- Bring a large pot of salted water to a boil.
- Cook the noodles according to package instructions until al dente. Drain and toss with 1 tbsp sesame oil to prevent sticking. Set aside.
Step 2: Make the Chili Garlic Oil
- Heat ¼ cup vegetable oil in a small saucepan over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Stir in the red chili flakes and sesame seeds. Cook for an additional 30 seconds, then remove from heat.
- Mix in soy sauce and sugar, stirring until combined.
Step 3: Prepare the Sauce
- In a small bowl, combine light soy sauce, dark soy sauce, rice vinegar, chili oil (if using), and toasted sesame oil.
- Whisk until smooth and set aside.
Step 4: Toss the Noodles
- Place the cooked noodles in a large mixing bowl.
- Pour the chili garlic oil over the noodles, followed by the sauce.
- Toss the noodles until evenly coated, using tongs or chopsticks.
Step 5: Add Toppings and Serve
- Transfer the noodles to serving bowls.
- Garnish with chopped green onions, crushed peanuts, fresh cilantro, fried shallots, or lime wedges as desired.
- Serve warm and enjoy!
