Instructions
Making Spicy Peanut Noodles is straightforward if you follow these easy steps:
1. Cook the Noodles: In a large pot of boiling salted water, cook the noodles according to package instructions. Drain and set aside.
2. Make the Sauce: In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, sriracha, water, ginger, and garlic until smooth and creamy. Adjust the spice level if desired by adding more sriracha.
3. Sauté the Vegetables: In a large skillet, add a splash of oil over medium heat. Add the bell peppers, carrots, and snap peas. Sauté for about 5-7 minutes until they are tender-crisp.
4. Combine Noodles and Sauce: Add the cooked noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over everything and toss carefully to coat every noodle and veggie with the sauce.
5. Garnish: Remove from heat and garnish with chopped green onions and crushed peanuts. Add fresh cilantro if you like.
6. Adjust Seasoning: Taste and adjust seasoning if necessary, adding more soy sauce or honey as desired.
7. Serve: The noodles are now ready to be served warm!
