For the Pasta
- 12 oz fettuccine pasta (or your preferred type of pasta)
- 1 tsp salt (for pasta water)

Step 1: Prepare the Steak
- Season the Steak: Pat the steak dry with paper towels and rub it with olive oil, garlic, salt, black pepper, and smoked paprika (if using). Let it rest at room temperature for 15-20 minutes.
- Sear the Steak: Heat a large skillet over medium-high heat. Add 1 tbsp butter and let it melt. Place the steak in the skillet and cook for 3-4 minutes per side for medium-rare, adjusting the time for your desired doneness.
- Rest and Slice: Remove the steak from the skillet and let it rest on a cutting board for 5-10 minutes. Slice it thinly against the grain and set aside.
Step 2: Cook the Pasta
- Boil the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, following the package instructions (typically 10-12 minutes). Reserve ½ cup of pasta water, then drain the pasta.
Step 3: Make the Alfredo Sauce
- Sauté Garlic: In the same skillet used for the steak, melt 4 tbsp butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add Cream: Pour in the heavy cream and stir, bringing the mixture to a gentle simmer.
- Incorporate Parmesan: Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
- Season: Add salt, black pepper, and a pinch of nutmeg (if using). Adjust seasonings to taste.
Step 4: Combine and Serve
- Toss the Pasta: Add the cooked fettuccine to the Alfredo sauce, tossing to coat evenly. Use reserved pasta water to adjust the sauce’s consistency if needed.
- Plate the Dish: Divide the pasta among serving plates and top each portion with sliced steak.
- Garnish: Sprinkle with fresh parsley, extra Parmesan, and cracked black pepper for a finishing touch.
