For the Garlic Butter Steak Bites:

  • 1 ½ lbs (680g) sirloin steak or ribeye, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper

For the Creamy Mashed Potatoes:

  • 2 lbs (900g) Yukon Gold or russet potatoes, peeled and cut into chunks
  • 4 tbsp unsalted butter
  • ½ cup (120ml) heavy cream or whole milk
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Optional Garnishes:

  • Extra parsley
  • Grated Parmesan cheese

Instructions

1. Prepare the Potatoes

  1. Fill a large pot with water, add a generous pinch of salt, and bring it to a boil.
  2. Add the potato chunks and boil for 15–20 minutes, or until they are fork-tender.
  3. Drain the potatoes and return them to the pot.

2. Make the Mashed Potatoes

  1. Add butter, heavy cream (or milk), garlic powder, salt, and black pepper to the pot with the drained potatoes.
  2. Use a potato masher or handheld mixer to mash the potatoes until smooth and creamy. Add more cream or milk if needed to achieve your desired consistency.
  3. Taste and adjust seasoning as necessary. Cover and keep warm.

3. Prepare the Steak Bites

  1. Pat the steak cubes dry with paper towels to remove excess moisture—this ensures a good sear.
  2. Season the steak cubes evenly with smoked paprika, onion powder, salt, and black pepper.
  3. Heat a large skillet or cast-iron pan over medium-high heat and add the olive oil.
  4. Once the oil is hot, add the steak cubes in a single layer. Cook for 2–3 minutes per side, ensuring they get a nice crust. Avoid overcrowding the pan; cook in batches if necessary.
  5. Remove the steak bites from the skillet and set them aside.

4. Make the Garlic Butter Sauce

  1. Lower the heat to medium and add the butter to the skillet. Let it melt, then add the minced garlic. Cook for 1–2 minutes, stirring constantly, until fragrant.
  2. Stir in the chopped parsley.
  3. Return the steak bites to the skillet and toss them in the garlic butter sauce until fully coated and warmed through.

5. Assemble and Serve

  1. Spoon a generous portion of mashed potatoes onto each plate.
  2. Top with the garlic butter steak bites and drizzle any remaining sauce from the skillet over the dish.
  3. Garnish with extra parsley or grated Parmesan cheese, if desired, and serve immediately.
