Strawberry and Cream Cheese Strudel

  • Author: Olivia
  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

For the Strudel

  • 1 sheet puff pastry, thawed (from a 17.3 oz package)
  • 1 cup fresh strawberries, diced
  • 4 oz cream cheese, softened
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

For the Egg Wash

  • 1 egg
  • 1 tbsp water

For the Glaze (Optional)

  • ½ cup powdered sugar
  • 12 tbsp milk or cream
  • ¼ tsp vanilla extract

Instructions

Step 1: Prepare the Filling

  1. Mix the Cream Cheese Layer: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Prepare the Strawberry Mixture: In another bowl, combine diced strawberries, cornstarch, and lemon juice. Toss until evenly coated.

Step 2: Roll and Shape the Puff Pastry

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll Out the Pastry: On a lightly floured surface, roll the puff pastry into a 10×12-inch rectangle. Transfer to the prepared baking sheet.
  3. Mark the Sections: Lightly score the pastry lengthwise into three equal sections. Do not cut all the way through.

Step 3: Assemble the Strudel

  1. Spread the Filling:
    • Spread the cream cheese mixture down the center section of the pastry.
    • Top with the strawberry mixture.
  2. Create the Braid (Optional):
    • Cut 1-inch strips on both sides of the filling along the outer sections.
    • Fold the strips diagonally over the filling, alternating sides to create a braided pattern.
  3. Seal the Edges: Tuck the ends of the pastry under to secure the filling.

Step 4: Bake the Strudel

  1. Apply the Egg Wash: In a small bowl, whisk the egg and water. Brush the egg wash over the top of the pastry for a shiny, golden finish.
  2. Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
  3. Cool: Allow the strudel to cool slightly on the baking sheet before transferring to a wire rack.

Step 5: Add the Glaze (Optional)

  1. Make the Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle: Drizzle the glaze over the cooled strudel using a spoon or piping bag.

Step 6: Serve and Enjoy

  1. Slice and Serve: Slice the strudel into 8 pieces and serve warm or at room temperature.
  2. Optional Sides: Pair with a dollop of whipped cream or a scoop of vanilla ice cream for added indulgence.
