For the Strudel

- 1 egg
- 1 tbsp water

- ½ cup powdered sugar
- 1–2 tbsp milk or cream
- ¼ tsp vanilla extract
Instructions
Step 1: Prepare the Filling
- Mix the Cream Cheese Layer: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Prepare the Strawberry Mixture: In another bowl, combine diced strawberries, cornstarch, and lemon juice. Toss until evenly coated.
Step 2: Roll and Shape the Puff Pastry
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll Out the Pastry: On a lightly floured surface, roll the puff pastry into a 10×12-inch rectangle. Transfer to the prepared baking sheet.
- Mark the Sections: Lightly score the pastry lengthwise into three equal sections. Do not cut all the way through.
Step 3: Assemble the Strudel
- Spread the Filling:
- Spread the cream cheese mixture down the center section of the pastry.
- Top with the strawberry mixture.
- Create the Braid (Optional):
- Cut 1-inch strips on both sides of the filling along the outer sections.
- Fold the strips diagonally over the filling, alternating sides to create a braided pattern.
- Seal the Edges: Tuck the ends of the pastry under to secure the filling.
Step 4: Bake the Strudel
- Apply the Egg Wash: In a small bowl, whisk the egg and water. Brush the egg wash over the top of the pastry for a shiny, golden finish.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
- Cool: Allow the strudel to cool slightly on the baking sheet before transferring to a wire rack.
Step 5: Add the Glaze (Optional)
- Make the Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle: Drizzle the glaze over the cooled strudel using a spoon or piping bag.
Step 6: Serve and Enjoy
- Slice and Serve: Slice the strudel into 8 pieces and serve warm or at room temperature.
