Toppings:

  • ½ cup cooked halal beef bacon or turkey bacon, chopped
  • ¼ cup sliced jalapeños (fresh or pickled)

  • 2 green onions, finely chopped
  • ¼ cup chopped cilantro
  • ¼ cup sour cream or plain Greek yogurt
  • 1 tbsp white truffle oil

Instructions

Step 1: Prepare the Fries

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or foil. Spread out the frozen fries in an even layer, drizzle with olive oil, and sprinkle with garlic powder, paprika, and a pinch of salt. Toss to coat, then bake for 20–25 minutes or until golden and crispy, flipping once halfway through for even crisping.

Step 2: Make the Cheese Sauce

While the fries are baking, start on your cheese sauce. In a medium saucepan over medium heat, melt the butter. Add the flour and whisk continuously for 1–2 minutes to form a roux (this helps thicken the sauce without lumps). Slowly pour in the milk, whisking constantly to avoid clumps.

Once the mixture begins to simmer and thicken, reduce heat to low and add both cheeses. Stir until melted and smooth. Season with salt, pepper, and a tiny pinch of cayenne or paprika for a gentle kick. Keep warm on low heat.

Step 3: Cook the Bacon

While the cheese sauce is finishing, cook your halal beef or turkey bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate, then chop into bite-sized pieces. You want that salty crunch to balance the creaminess of the sauce.

Step 4: Assemble the Loaded Fries
