Cucumber Kimchi: The Amazing Ultimate Recipe with 5 Steps

  • Author: Olivia
  • Total Time: 1 hour 15 minutes

Ingredients

– 3 cups of cucumbers (preferably Korean cucumbers)
– 1 tablespoon sea salt
– 1 tablespoon sugar
– 4 tablespoons fish sauce (or soy sauce for a vegetarian option)
– 1 tablespoon Korean red pepper flakes (gochugaru)
– 3 cloves of garlic, minced
– 1 teaspoon ginger, minced
– 1 tablespoon green onions, chopped
– 1 tablespoon sesame seeds (optional)

Instructions

Creating Cucumber Kimchi is straightforward with these easy steps:

1. Prepare the Cucumbers: Wash the cucumbers thoroughly. Slice them into quarters lengthwise, then crosswise into bite-sized pieces.
2. Salt the Cucumbers: In a large bowl, combine the cucumber pieces with sea salt. Toss well and let them sit for about 15-20 minutes to draw out excess moisture.
3. Make the Kimchi Paste: In a separate bowl, mix together sugar, fish sauce, Korean red pepper flakes, minced garlic, and ginger until well combined.
4. Combine Ingredients: After 20 minutes, rinse the salted cucumbers under cold water and drain thoroughly. Add the cucumbers to the kimchi paste and mix until the cucumbers are evenly coated.
5. Add Green Onions and Sesame Seeds: Stir in chopped green onions and sprinkle with sesame seeds if using. Mix until well incorporated.
