Ingredients
– 300 grams fresh spinach (palak)
– 200 grams paneer (Indian cottage cheese)
– 1 medium onion, finely chopped
– 2-3 cloves garlic, minced
– 1-inch piece of ginger, grated
– 1-2 green chilies, chopped (adjust to taste)
– 1 teaspoon cumin seeds
– 1 teaspoon garam masala
– ½ teaspoon turmeric powder
– ½ teaspoon red chili powder (optional)
– 2 tablespoons cooking oil or ghee
– Salt to taste
– 2 tablespoons cream (optional for extra richness)
Instructions
Creating Palak Paneer is simple if you follow these easy steps:
1. Blanch the Spinach: Bring a pot of water to a boil. Add the spinach and blanch for 2-3 minutes until wilted. Drain and immediately transfer it to ice water to retain its vibrant color.
2. Blend the Spinach: Once cooled, drain the spinach again and blend it into a smooth paste. Set aside.
3. Cook the Paneer: Cut the paneer into cubes. In a pan, heat 1 tablespoon of oil or ghee and lightly fry the paneer until golden on all sides. Remove and set aside.
4. Sauté the Aromatics: In the same pan, add the remaining oil. Add cumin seeds and let them crackle. Then, add the chopped onions, garlic, ginger, and green chilies. Sauté until the onions turn translucent.
5. Add Spices: Stir in the turmeric powder, garam masala, and red chili powder. Cook for a minute until fragrant.
6. Combine Spinach and Paneer: Add the spinach paste to the pan and mix well. Cook for 5-7 minutes, adding water if necessary to achieve your desired consistency.
7. Finish with Cream: If using, stir in the cream for a richer flavor. Add the fried paneer cubes and salt to taste. Simmer for another 2-3 minutes.
8. Adjust Seasoning: Taste and adjust seasoning as necessary. If you prefer a smoother texture, you can blend the mixture again.
9. Serve Hot: Remove from heat and serve hot with naan, roti, or rice.
